    Rich in antioxidants and flavour, matcha turns this loaf cake into a truly unique treat. Perfect alongside tea or coffee, this matcha cake is quick and easy to make, with a soft crumb and delicate green tea notes.

    Ingredients (serves 4)

    • 2 tsp matcha green tea powder: our organic ceremonial matcha
    • 125 g plain flour
    • 2 eggs
    • 100 g salted butter
    • 100 g icing sugar
    • 2 tsp baking powder
    • 1 pinch of salt

    Method

    Step 1: Prepare the butter

    1. Preheat the oven: Preheat your oven to 180°C.
    2. Melt the butter: Melt the butter gently in a saucepan.

    Step 2: Mix the dry ingredients

    1. Combine: In a mixing bowl, combine the flour, baking powder, and matcha.

    Step 3: Make the batter

    1. Whisk eggs and sugar: In another bowl, crack the eggs and separate yolks and whites. Beat the yolks with the icing sugar until fluffy. Gradually add the melted butter, then the flour mixture.
    2. Whip the egg whites: Whisk the egg whites with a pinch of salt until stiff peaks form. Gently fold them into the batter using a spatula.

    Step 4: Bake

    1. Pour: Pour the batter into a greased and floured loaf tin.
    2. Bake: Bake for 30 to 40 minutes. Check doneness by inserting a knife into the centre: it should come out clean.

    Step 5: Cool and serve

    1. Cool: Unmould onto a rack and let it cool completely before slicing.

    Tip

    For a pretty finish, dust the cake with a little matcha powder or icing sugar before serving. You can also pair it with a homemade jam for extra indulgence.
