Rich in antioxidants and flavour, matcha turns this loaf cake into a truly unique treat. Perfect alongside tea or coffee, this matcha cake is quick and easy to make, with a soft crumb and delicate green tea notes.
Ingredients (serves 4)
- 2 tsp matcha green tea powder: our organic ceremonial matcha
- 125 g plain flour
- 2 eggs
- 100 g salted butter
- 100 g icing sugar
- 2 tsp baking powder
- 1 pinch of salt
Method
Step 1: Prepare the butter
- Preheat the oven: Preheat your oven to 180°C.
- Melt the butter: Melt the butter gently in a saucepan.
Step 2: Mix the dry ingredients
- Combine: In a mixing bowl, combine the flour, baking powder, and matcha.
Step 3: Make the batter
- Whisk eggs and sugar: In another bowl, crack the eggs and separate yolks and whites. Beat the yolks with the icing sugar until fluffy. Gradually add the melted butter, then the flour mixture.
- Whip the egg whites: Whisk the egg whites with a pinch of salt until stiff peaks form. Gently fold them into the batter using a spatula.
Step 4: Bake
- Pour: Pour the batter into a greased and floured loaf tin.
- Bake: Bake for 30 to 40 minutes. Check doneness by inserting a knife into the centre: it should come out clean.
Step 5: Cool and serve
- Cool: Unmould onto a rack and let it cool completely before slicing.
Tip
For a pretty finish, dust the cake with a little matcha powder or icing sugar before serving. You can also pair it with a homemade jam for extra indulgence.
