    Matcha, rich in antioxidants, pairs beautifully with a smooth, creamy filling for the perfect balance between sweetness and gentle bitterness. Follow our simple recipe to make matcha Swiss rolls at home.

    Prep time:

    20 minutes prep, 15 minutes baking, 30 minutes resting

    Ingredients:

    • 4 eggs
    • 100 g sugar
    • 100 g sifted flour
    • 2 tsp of organic ceremonial matcha
    • 1 tsp baking powder
    • 250 g whipped cream or mascarpone
    • 2 tbsp icing sugar
    • 1 tsp vanilla extract (optional)
    • Toppings: matcha pearls, sesame seeds (optional)

    Method:

    1. Make the matcha sponge: Preheat the oven to 180°C. In a large bowl, whisk the eggs and sugar until pale and fluffy. Add the sifted flour, matcha, and baking powder. Fold gently until smooth.
    2. Bake: Spread the batter onto a baking tray lined with parchment paper. Bake for 10–12 minutes, until lightly golden. Remove and let cool for a few minutes.
    3. Prepare the filling: While the sponge cools, whip the cream with the icing sugar and vanilla (if using) until firm.
