Discover this delicious Japanese-inspired twist on a classic chocolate cake: the White Chocolate & Matcha Cake. Ingredients:
- 180 g white chocolate (preferably baking chocolate)
- 100 g unsalted butter
- 2 tbsp matcha Organic Ceremonial Matcha
- 3 large eggs, separated
- 60 g sugar
- 50 ml whole milk
- 60 g cake flour (or all-purpose flour + a little cornstarch)
- 1 pinch of salt
Method:
Step 1: Melt the chocolate and butter
- Bain-marie method: Melt the white chocolate and butter together in a heatproof bowl set over a pan of gently simmering water. Stir regularly until smooth and glossy.
- Add the matcha: Sift in the matcha powder, then mix well into the chocolate-butter mixture.
Step 2: Prepare the batter
- Whisk the egg yolks: In a separate bowl, whisk the egg yolks with 40 g of sugar until thick and pale.
- Combine: Add the matcha chocolate mixture to the yolks, then stir in the milk. Sift the flour over the bowl and fold gently until smooth.
Step 3: Whip the egg whites
- Make a meringue: In another bowl, whip the egg whites with a pinch of salt. Gradually add the remaining 20 g sugar and continue whisking until stiff peaks form.
- Fold: Gently fold the whipped whites into the batter in two additions, being careful not to overmix.
Step 4: Bake
- Preheat: Preheat your oven to 180°C (350°F).
- Pour: Pour the batter into a 15 cm (6-inch) round cake tin, greased and lined with baking paper.
- Bake: Bake for 15 minutes at 180°C, then reduce to 160°C (325°F) and bake for a further 20 minutes. The centre should remain slightly wobbly.
Step 5: Cool and serve
- Cool: Let the cake cool completely for at least 4 hours before unmoulding. This resting time is key for the perfect fudgy texture.
- Serve: Enjoy slightly warm with tea or coffee to fully appreciate the delicate matcha notes and creamy white chocolate.
