    These donuts are ideal for an afternoon snack or a light dessert. They bring together feel-good ingredients like banana, naturally rich in fibre, and matcha, loved for its antioxidant content.     Prep time:

    10 minutes prep, 10 minutes baking (+ 30 minutes resting)

    Ingredients for banana-matcha donuts:

    • 120 ml lukewarm water
    • 100 g very ripe banana
    • 200 g flour
    • 40 g coconut sugar (or unrefined brown sugar)
    • 30 ml olive oil
    • 1 tsp active dry yeast
    • Vanilla powder
    • A pinch of salt

    For the matcha glaze:

    How to make banana-matcha donuts:

    1. Make the dough: Mix the lukewarm water with the yeast and coconut sugar in a bowl. Let it rest for a few minutes to activate the yeast.
    2. Mash the banana: Mash the banana into a purée and stir it into the mixture. Add the olive oil, flour, a pinch of salt, and a little vanilla powder.
    3. Fill the moulds: Fill donut (or savarin) moulds up to 3/4 full. Rest the dough in the fridge for about 30 minutes.
    4. Bake: Preheat the oven to 200°C. Bake for about 10 minutes, until golden and slightly firm to the touch.

    1. Whisk everything together: In a bowl, whisk the icing sugar, water, and matcha until smooth and glossy.
    2. Dip the donuts: Once the donuts have cooled, dip them into the matcha glaze and let them set for a few minutes before enjoying.

    For an even smoother, more intense matcha flavour, use our bamboo matcha whisk (chasen) to blend the matcha into the glaze—this helps distribute the flavour evenly in every bite.
