Turn yesterday’s croissants into irresistible matcha almond croissants with this easy recipe. Crunchy almonds, buttery richness, and the subtle bitterness of matcha make these a must-have for breakfast or a standout brunch.
Ingredients for 4 croissants:
- 115 g unsalted butter, softened at room temperature
- 100 g ground almonds
- 80 g icing sugar
- 2 tbsp our organic ceremonial matcha
- 1/4 tsp salt
- 2 large eggs, at room temperature
- 4 croissants
- Flaked almonds (optional)
Method:
Step 1: Make the matcha frangipane

Prepare the frangipane: Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper. In a bowl, beat the softened butter until smooth and creamy. Add the eggs one at a time, mixing on low speed after each addition.

Add the dry ingredients: Sift the ground almonds, icing sugar, matcha and salt into the butter-and-egg mixture. Mix until you get a smooth paste. Transfer the frangipane into a piping bag.
Step 2: Fill and top the croissants

Prepare the croissants: Slice the croissants lengthwise and place the bottom halves on the baking tray. Pipe a generous amount of matcha frangipane onto each bottom half, then close with the top halves.

Add the topping: Use the remaining frangipane to pipe a line over the top of each croissant. If you like, sprinkle with flaked almonds for extra crunch.
Step 3: Bake

Bake: Bake for around 20–25 minutes, until deeply golden and crisp. Let cool slightly, then dust with icing sugar and a touch of matcha.
Tip:
Use slightly stale croissants for an even crispier texture. For an extra treat, brush the croissants with a light sugar syrup before filling—this adds a subtle caramelised finish.
