    Prep time:

    10 minutes prep, 12 hours chilling in the fridge

    Ingredients:

    • 630 g courgettes
    • 30 g lemon juice (or a mix of 20 g lemon + 10 g yuzu juice)
    • 65 g white almond butter
    • 4 tbsp maple syrup or agave syrup
    • 4 to 5 tbsp coconut oil
    • 1 tsp of organic ceremonial matcha

    Method:

    1. Prep the courgettes: If using green courgettes, peel them for an extra-smooth texture. If using yellow or pale courgettes, you can leave the skin on—just wash well.
