Try these delicious vegan cookies made with organic matcha and dark chocolate chips. Crisp around the edges and soft in the centre, they’re the perfect sweet treat to enjoy alongside your matcha ritual.
Ingredients (makes 10 cookies):
- 100 g organic margarine (70% fat), at room temperature
- 40 g organic white sugar
- 50 g organic brown sugar
- 50 g organic unsweetened apple purée
- 30 g organic ground almonds
- 10 g Organic Ceremonial Matcha
- A pinch of organic salt
- 160 g organic T55 flour
- 1/2 tsp organic baking powder
- 75 g organic dairy-free dark chocolate chips
Method:
Step 1: Make the dough
- Cream the margarine: In a bowl, beat the margarine until smooth and creamy. Add the white sugar and brown sugar, then mix until fluffy.
- Add the wet ingredients: Add the apple purée, ground almonds, matcha and salt. Mix until fully combined.
Step 2: Add the dry ingredients
- Add flour and baking powder: Gently fold in the flour and baking powder using a spatula. Mix just until you get a smooth dough.
- Add the chocolate chips: Fold in the dairy-free dark chocolate chips.
Step 3: Shape the cookies
- Shape the dough: Scoop about 50 g of dough per cookie and roll into balls. Place them on a baking tray lined with parchment paper.
- Flatten slightly: Gently press each ball down with a flat surface (for example, the lid of a jar).
Step 4: Bake
- Bake: Bake at 170°C for 14 to 18 minutes, depending on how soft you like your cookies.
- Cool: Remove from the oven and let the cookies cool on a wire rack.
Tip:
To avoid lumps, sift the matcha before adding it. These cookies are best enjoyed the same day, but they’ll keep well in an airtight container.
