In a shaker, gently muddle the mint leaves and mix them with the honey at the bottom.
Whisk the matcha with a small splash of water to form a smooth paste, then add it to the shaker with the remaining ingredients. If you prefer, you can also add everything at once.
Add the gin and a few ice cubes to the shaker, then shake vigorously.
Strain into the cocktail glass of your choice. Garnish with fresh mint or a slice of lime, depending on your preference.
For a softer, sweeter version, adjust the honey to taste. Or add a little extra lime for a brighter, tangier finish.
