Method
- Make the dough: In a large bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla, then mix well.
- Combine the dry ingredients: In another bowl, sift together the flour, matcha, baking powder, and salt.
- Bring it together: Gradually add the dry mix to the butter mixture until a smooth dough forms.
- Chill: Divide the dough into two, shape into discs, wrap, and refrigerate for 1 hour. Let sit at room temperature for about 15 minutes before rolling.
- Preheat the oven: Preheat to 180°C (350°F). Line a baking tray with parchment paper.
- Cut the cookies: Roll the dough to about 1/4 inch thick on a lightly floured surface. Cut out shamrocks with a cookie cutter. Gather scraps and repeat.
- Bake: Bake for 10–12 minutes, until the edges are lightly golden. Cool 1 minute on the tray, then transfer to a rack to cool completely.
