    Upgrade your breakfast with this vibrant green omelette, delicately flavoured with matcha. Quick and delicious, it combines fluffy eggs with the antioxidant goodness of green tea—perfect for an energising morning or a light lunch that still feels indulgent.

    Ingredients for the omelette:

    • 2 eggs
    • 30 g flour (spelt or oat flour recommended)
    • 1 tsp maple syrup or another sweetener (e.g. erythritol)
    • 3 g of our organic ceremonial matcha
    • A handful of spinach
    • A little butter for cooking

    For the topping:

    For decoration:

    • Seasonal fruit
    • Nuts (almonds, hazelnuts…)

    Method:

    Step 1: Make the batter

    1. Separate the egg whites from the yolks. Whisk the whites until stiff and airy.
    2. In another bowl, mix the yolks with the matcha, sweetener, flour, and finely chopped spinach. Gently fold this mixture into the whipped egg whites.

    Step 2: Cook the omelette

    1. Heat a little butter in a pan over medium heat.
    2. Pour in the mixture, cover, and cook for 3–4 minutes until the bottom is golden. Flip the omelette and cook for a few more seconds to finish.

    Step 3: Prepare the topping

    1. Mix the Greek yoghurt with maple syrup and matcha.
    2. Spread over the omelette before serving, then top with fresh fruit and nuts for extra crunch and freshness.

    Tip:

    For a more filling breakfast, add chia seeds or oats to the topping. Switch up the fruit with the seasons for a different twist each time.
