Make these adorable matcha & coconut Christmas tree cookies for the festive season. Their cute tree shape and unique blend of green tea and coconut make them a must-have treat to share with loved ones. Easy to prepare, they’ll add a joyful, elegant touch to your holiday table.
Ingredients (makes about 35 cookies):
- 50 g desiccated coconut (plus extra for decorating)
- 60 g icing sugar
- 150 g flour (plus extra for dusting)
- 2 tsp matcha Organic Ceremonial Matcha
- 125 g cold butter, cut into pieces
- 1 egg yolk
- Zest of 1 lime + 1 tsp lime juice
- 1 pinch of salt
For the icing:
- About 100 g icing sugar
- About 3 tsp milk
- Green food colouring (optional)
Method:
Step 1: Make the dough
- Mix the dry ingredients: In a food processor, blitz the desiccated coconut with the icing sugar until finely ground. In a separate bowl, mix the flour and matcha.
- Add the wet ingredients: Add the flour-matcha mixture to the coconut-sugar, then add the cold butter, egg yolk, lime zest and juice, and a pinch of salt. Knead quickly until you get a smooth dough.
- Chill the dough: Wrap in cling film and refrigerate for at least 30 minutes.
Step 2: Bake the cookies
- Preheat: Preheat your oven to 160°C (140°C fan).
- Shape: Roll out the dough on a lightly floured surface to about 5 mm thick. Use a Christmas tree cutter to cut out shapes.
- Bake: Place on a baking tray lined with baking paper and bake for 10–15 minutes, until lightly golden at the edges (keep them green). Cool completely.
Step 3: Decorate
- Make the icing: Mix icing sugar with milk (add a few drops of green colouring if you like).
- Decorate: Ice the cooled cookies, then sprinkle with desiccated coconut before the icing sets. Let dry completely before storing.

You can prepare the dough in advance and freeze it to save time during the holidays. You can also use different cookie cutters depending on the occasion.
