Enjoy a light, delicately scented treat with this matcha brioche swirled with cream cheese. The soft, fluffy crumb pairs beautifully with the subtle bitterness of organic ceremonial matcha and the richness of cream cheese—ideal for a chic brunch or a feel-good breakfast.
Serves: 6–8
Mix the yeast into the warm milk and let it rest for 10 minutes, until foamy.
In a large bowl, combine the flour, matcha, sugar, and salt. Add the eggs, then the milk mixture. Knead for 5 minutes.
Add the softened butter in pieces and knead for 10 minutes until the dough is smooth and elastic. Cover with a tea towel and let rise for 1 h 30, until doubled.
Knock back the dough, roll into a rectangle, spread with cream cheese mixed with honey, then roll into a log. Place in a buttered tin.
Let rise for 30 minutes more under a clean cloth.
Preheat the oven to 180°C. Brush the top with the egg yolk mixed with milk. Bake for 25 minutes until beautifully golden.
