Ingredients for the Lemon, Poppy Seed & Matcha Loaf:
- 1 tbsp Organic Ceremonial Matcha (about 6 g)
- 3 large eggs
- 150 g flour (+ a little extra for the tin)
- 120 g melted butter
- 200 g sugar
- 80 g lemon juice
- Zest of 1 organic lemon
- 1/2 tsp baking powder
- 4 to 6 tsp poppy seeds
Method:
- Preheat: Preheat your oven to 170°C. Butter and flour a loaf tin.
- Melt the butter: Melt the butter in a small saucepan over low heat. Sift the flour and baking powder together into a bowl.
- Make the base: In a large bowl, mix melted butter, sugar, and lemon zest. Add the eggs one at a time, mixing well after each.
- Add dry ingredients: Add the sifted flour and baking powder, then add the matcha. Mix gently until incorporated.
- Finish the batter: Add lemon juice and poppy seeds, then mix until smooth.
- Bake: Pour into the prepared tin and bake for about 35 minutes, or until a knife inserted in the centre comes out clean.
- Cool: Let the loaf cool slightly in the tin, then unmould onto a rack and cool completely.
Tip:
For a more elegant finish, lightly dust the loaf with matcha powder just before serving. It adds colour and intensifies the aroma.
