Perfect to gift (or treat yourself), they blend matcha’s delicate bitterness with the creamy sweetness of white chocolate, finished with a satisfying crunch from the toppings.     Ingredients

    • 200 g high-quality white chocolate (with natural cocoa butter)
    • 1 to 2.5 teaspoons of organic ceremonial matcha
    • 50 to 100 g shelled salted pistachios
    • Optional toppings: dried cranberries, pumpkin seeds, goji berries, coconut chips, toasted almond flakes

    Instructions

    1. Prepare the mould: Use a loaf tin or a food container lined with parchment paper. Choose a mould that creates an even thickness, similar to a chocolate bar.
    2. Melt the chocolate: Melt it gently in a bain-marie. Once smooth, remove from the heat and let it cool for a minute. Whisk in the sifted matcha. Taste and adjust to your preferred intensity.
    3. Add the toppings: Pour the matcha chocolate into the mould. Sprinkle over the roughly chopped pistachios and any other toppings you like. Press lightly so they set into the chocolate.
    4. Let it set: Leave to harden at room temperature for 4 to 5 hours. Avoid the fridge to preserve the texture and the colour.
    5. Enjoy or gift: Unmould, cut into pieces, and wrap nicely for gifting—or enjoy as is.

    Tips & variations

    For a more elevated finish, dust a little extra matcha or add a pinch of flaky sea salt before the chocolate sets. You can also try pecans, cacao nibs, or candied orange peel for a more indulgent flavour profile.
