Discover the silky softness of matcha flan—an elegant match between classic custard texture and matcha’s vegetal, umami notes. Refined yet comforting, this dessert adds a unique twist to the end of any meal.

Mix the matcha with a little warm milk, whisking briskly with a chasen or frother to prevent lumps.
In a mixing bowl, whisk the eggs and sugar until pale. Add the cornflour, then gradually whisk in the milk, cream, vanilla extract, and dissolved matcha.
If using caramel, pour it into the bottom of the tin. Strain the mixture, then pour it into the tin. Bake in a water bath at 160°C for 45 minutes, until set but still slightly wobbly in the centre.
Let it cool at room temperature, then refrigerate for at least 2 hours. Unmould and serve chilled or slightly warm.

Tips: For a stronger matcha taste, increase to 2 tsp. Serve with a red berry coulis or a spoon of whipped cream for extra indulgence.
