This luxurious matcha mousse cake, finished with a white chocolate glaze and topped with cherries, is a true showstopper. Ingredients
For the sponge cakes
- Vegetable oil, for greasing
- 6 large eggs, separated
- 200 g white caster sugar
- 1 tsp vanilla extract
- 100 g flour
- 25 g ground almonds
- 50 g butter, melted and cooled
For the matcha mousse

- 150 ml double cream
- 150 g white chocolate, chopped
- 1 tsp organic ceremonial matcha
- Cherries and cherry blossom for decoration (optional)
Method
Step 1: Make the sponge cakes
- Preheat the oven to 180°C (160°C fan). Grease two 20 cm cake tins (one should be at least 8 cm deep) with oil and line with baking paper.
- In a large bowl, whisk the egg yolks with the sugar and vanilla. In a separate bowl, whisk the egg whites to soft peaks.
- Stir a spoonful of egg whites into the yolk mixture to loosen it, then gently fold in the remaining whites.
- Sift the flour and ground almonds over the batter. Pour the cooled butter around the edge of the bowl, then fold gently. Divide between the tins and bake for 22–25 minutes. Cool completely.
Step 2: Make the matcha mousse
- Soak the gelatine leaves in cold water. Warm 150 ml of the cream with 50 ml hot water in a saucepan, add the matcha, and whisk until fully dissolved. Squeeze out the gelatine, then stir it in until melted.
- Let it cool to room temperature. Whip the remaining 450 ml cream with the icing sugar to soft peaks, then gently fold in the cooled matcha mixture.
- Spread the matcha mousse over the first sponge. Place the second sponge on top. Chill for at least 4 hours to set.
Step 3: Make the glaze
- Warm the cream with the white chocolate and matcha over low heat until the chocolate melts. Let it cool slightly.
- Pour the glaze over the cake and chill for 30 minutes. Decorate with cherries and (optionally) cherry blossom before serving.
