In a bowl, whisk together the soy sauce, sesame oil, maple syrup, ginger, and matcha until smooth and well combined.
Cut the tofu into thick slices or cubes. Pat dry gently with kitchen paper to remove excess moisture.
Add the tofu to the marinade, toss to coat evenly, and let it rest for 10 minutes at room temperature.
Heat the neutral oil in a pan over medium heat. For a crispier crust, lightly dust the tofu with cornflour before searing. Cook about 5 minutes per side, until the edges turn golden.
When the tofu is almost cooked, sprinkle with sesame seeds and cook for 1 more minute to toast them lightly.
